Diana's Granola

This granola is great to eat for breakfast as a bowl of cereal, to sprinkle over some yogurt and fruit, to make a parfait, or as a topping for a bagel smothered in cream cheese.

Ingredients

  • 3 cups old fashioned oats
  • 1 cup quick oats
  • 1 cup cashews
  • 1 cup pecans
  • 1 cup walnuts
  • 1/2 cup olive oil
  • 2/3 cup brown sugar
  • 1/2 cup maple syrup
  • 1/4 tsp nutmeg (preferably grated whole nutmeg)
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1 tsp salt
  • 1/2 cup dried pomegranates
  • 1/2 cup dried cranberries

Instructions

  • Preheat oven to 250 degrees
  • Into a large bowl add old fashioned and quick oats
  • Chop nuts to desired size and add to oats
  • In a small bowl add oil, brown sugar, maple syrup, nutmeg, cinnamon, cardamom, and salt, and stir to combine
  • Pour the mixture over the oats and nuts, and stir until all of the oats and nuts are evenly coated.
  • Spray a sheet pan with cooking spray and spread granola into an even layer
  • Bake for one hour and 15 minutes, stirring every 15 minutes to ensure the granola cooks evenly
  • Allow to cool completely.  
  • In a large bowl add granola, pomegranates and cranberries and mix so dried fruit is evenly dispersed in granola

Notes

Granola can be stored in air tight container for several weeks.
