Preheat oven to 350° and spray loaf pan with cooking spray.
Peel bananas and place into a large bowl. Mash bananas with a fork.
Add brown sugar, milk, apple butter, vanilla, and melted butter and whisk until well combined.
In a small bowl combine flour, baking soda, baking powder, and salt and whisk.
Add dry ingredients to wet ingredients and stir until just combined.
Fold in ½ cup of almonds.
Pour the mixture into prepared loaf pan and arrange the remaining ¼ cup of almonds on the top of the batter.
Place pan on the middle rack of the oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for about 10 minutes, then transfer to a cooling rack. Allow to cool for at least 30 minutes before slicing and serving.
This bread is great with a smear of softened butter, or better yet a smear of cream cheese!
