Strawberry Almond Banana Bread
Ingredients
- 2 large over ripe bananas about one cup
- ½ cup apple butter applesauce can be substituted
- ⅓ cup butter melted
- ⅔ cup dark brown sugar light brown or granulated can be substituted
- ⅓ milk
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup + ¼ cup slivered almonds use any nuts you like
- 1 ½ cup strawberries fresh or frozen, thawed, and drained
Instructions
- Preheat oven to 350° and spray loaf pan with cooking spray.
- Peel bananas and place into a large bowl. Mash bananas with a fork.
- Add brown sugar, milk, apple butter, vanilla, and melted butter and whisk until well combined.
- In a small bowl combine flour, baking soda, baking powder, and salt and whisk.
- Add dry ingredients to wet ingredients and stir until just combined.
- Fold in ½ cup of almonds.
- Pour the mixture into prepared loaf pan and arrange the remaining ¼ cup of almonds on the top of the batter.
- Place pan on the middle rack of the oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a cooling rack. Allow to cool for at least 30 minutes before slicing and serving.
- This bread is great with a smear of softened butter, or better yet a smear of cream cheese!
Just look at this heavenly Strawberry Almond Banana Bread! What do you do when you have 2 bananas left on your counter that are past their prime….look for a baked good recipe where you can use them up, of course! Well, all of the recipes that I had called for 3 or 4 bananas. So, I had to call in an expert. I sent a text to my friend Kim, The Baking Chocolatess, and asked for some ideas. She sent me her newest creation, Banana Strawberry Walnut Bread which looked delectable. I didn’t have all of the ingredients that she called for so I improvised a bit. Here is my version…Strawberry Almond Banana Bread!
Start by preheating your oven to 350° and spraying a loaf pan with cooking spray, and set aside. Peel your bananas, place into a large bowl, and mash the bananas with a fork. Add in the brown sugar, milk, apple butter, vanilla, and melted butter and whisk until well combined. In a small bowl combine flour, baking soda, baking powder, and salt and whisk together. Add dry ingredients to wet ingredients and stir until just combined. Fold in strawberries. You can either use fresh strawberries, or frozen strawberries that have been thawed and drained. Also fold in ½ cup of almonds. Finally, strategically place the remaining almonds on top of the batter so it looks beautiful when you pull it out of the oven….like this:
The hard part is letting the this beautiful baby cool long enough to slice into it. It’s best to let it cool in the pan for about 10 minutes and then turn it out onto a cooling rack and wait another 30 minutes…if you can.
