Strawberry Almond Banana Bread


  • 2 large over ripe bananas about one cup
  • ½ cup apple butter applesauce can be substituted
  • cup butter melted
  • cup dark brown sugar light brown or granulated can be substituted
  • milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup + ¼ cup slivered almonds use any nuts you like
  • 1 ½ cup strawberries fresh or frozen, thawed, and drained


  • Preheat oven to 350° and spray loaf pan with cooking spray.
  • Peel bananas and place into a large bowl. Mash bananas with a fork.
  • Add brown sugar, milk, apple butter, vanilla, and melted butter and whisk until well combined.
  • In a small bowl combine flour, baking soda, baking powder, and salt and whisk.
  • Add dry ingredients to wet ingredients and stir until just combined.
  • Fold in ½ cup of almonds.
  • Pour the mixture into prepared loaf pan and arrange the remaining ¼ cup of almonds on the top of the batter.
  • Place pan on the middle rack of the oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for about 10 minutes, then transfer to a cooling rack. Allow to cool for at least 30 minutes before slicing and serving.
  • This bread is great with a smear of softened butter, or better yet a smear of cream cheese!
